The simplest soup can't really go wrong. Throw all of the ingredients into the slow cooker then sit back and relax.
This is delicious. I'm into slow cooker use this time of year and bought one of those plastic boxes of mixed root veg from the local market - for about 1 euro 30. I already had the lentils and stock cubes but the veg pack had onion, potato, carrots, small swede, a big parsnip AND a bundle of herbs (bay leaf, parsley, rosemary and sage). I cooked it as Poppy said and blended to make it fairly smooth. It was DElish with a sprinkle of grated cheese and a baguette. Will try it next time with a tin of chopped tomatoes as part of the water content. This was fantastic. I used ready made soup mix with chopped swede, onion, carrot with parsley. I like my lentil soup chunky so didn't blend it. I also threw in some frozen petit pois an hour before serving.
