In a mixing bowl combine the honey and Jack Daniels barbecue glaze and mix well. Add in the chicken and toss to ensure an even coating. Set aside.
In a frying pan over a medium heat, warm the oil and add the mushrooms. Cook for 3 minutes then add chicken into the pan together with the marinade and add a splash of water. Simmer covered for 15 to 20 minutes, stirring occasionally.
When there is about 10 minutes of cooking time left for the Quorn chicken, place the rice in a saucepan and add just enough water to cover. Bring to the boil then cover and reduce the heat to low allowing the rice to simmer until soft and fluffy, about 8 minutes.
Bring a separate saucepan of water to the boil over a high heat and add the broccoli. Cook for 5 to 8 minutes until just tender. Drain.
Serve the chicken with the rice and broccoli on a warmed plate.
