These are definitely the best cookies you will ever eat! They melt on the tongue and have a slight crisp yet soft and gooey texture. The chocolate chips add a very special touch, but you can leave them out if you prefer. So delish you cant stop eating them!
Makes: 2 to 3 dozen cookies
225g unsalted butter
200g caster sugar
200g soft light brown sugar
1/2 teaspoon vanilla extract
240g crunchy or smooth peanut butter
340g plain flour
2 1/2 teaspoons bicarbonate of soda
1/2 teaspoon sea salt
200g milk or white chocolate chips

Preheat the oven to 170 degrees C. Line 4 greased baking trays with baking paper.
Use an electric hand mixer to beat the butter and sugars until light and creamy. Beat the eggs in gradually on a low speed, mixing well after each addition. Beat in the vanilla and peanut butter.
Mix in the flour, salt and bicarbonate of soda, then fold in the chocolate chips. Equally space out the cookies between the trays.
Bake for about 11 minutes, or until golden around the edges. The cookies will be super soft when you first take them out of the oven, so leave them for about 15 minutes before moving to a wire rack to cool.
