Unroll your puff pastry sheet and cut it into equal sized squares or rectangles. Then simply place them on a baking tray.
Bake in the preheated oven until they have risen into little pillows and have turned golden brown, this shouldn't take much longer than 10 minutes. Take them out the oven and leave to cool while you prepare the fruit and cream.
Whip the cream with the sugar and vanilla extract. This should create a thick whipped cream which you can use to dollop on top of your pillows, or you can use a piping bag and pipe the insides full of cream.
Once you’ve got cream on top, and in the middle, then arrange the fruit on top, slicing or chopping the fruit if necessary. You can then stack the pillows on top of one another to create towers of delight if you feel really fancy. Finally, finish off the whole thing by grating some white chocolate on top.
