Golden Coconut Macaroon Pyramids

    Simple coconut macaroons; no separating eggs or whisking whites!! I've tried lots of recipes but find this gives the most moist and flavoursome result! Use your choice of decorations.

    Serves: 8 

    • 2 eggs
    • 225g desiccated coconut
    • 150g caster sugar

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 180 degrees C. Line baking trays with baking paper.
    2. Beat eggs well. Stir in coconut and sugar. Leave mixture to stand for up to 20 minutes.
    3. Dip hands in cold water. Shape mixture into 16 pyramids, using your hands or an eggcup as a guide. Place on trays, decorate with glace cherries if desired.
    4. Bake in preheated oven for 25-30 mins or until golden. Remove from sheets and cool on a wire rack.
    5. Store in an airtight container to retain moisture.

    Decorating suggestion:

    Drizzle dark melted choc on top, wait for it to harden, then drizzle with white melted choc.
