Quick Mango Ice Cream

    Make this healthy frozen dessert in a food processor in just 5 minutes. Start with frozen mango chunks, add a little cream and small amount of sugar or honey. If you want it a little firmer, freeze for 15 to 20 minutes before serving.

    Ingredients
    Serves: 4 

    • 250g frozen mango chunks
    • 50 to 75ml chilled cream
    • 2 teaspoons caster sugar or honey, or to taste
    • garnish with fresh mint, optional

    1. Place mango in the bowl of food processor. Process to crumbs. While blade is spinning, add cream slowly. Add just enough to make it smooth. Add sugar or honey, and pulse a few times to combine.
    2. Scoop into bowls, and garnish with fresh mint if desired.
