    This was an experiment and now I cook it for my family every couple of weeks and they love it. Mix and match ingredients to suit your own tastes.

    Ingredients
    Makes: 1 pie

    • 5 carrots
    • 2 leeks
    • 1/2 large cauliflower
    • 25g butter
    • 350ml milk
    • 200g cheese
    • 8 rashers smoked bacon
    • 2 sheets shortcrust pastry

    Directions
    Preparation:30min  ›  Cook:45min  ›  Ready in:1hour15min 

    1. Chop all your vegetables into bite sized pieces and put them on the boil for 20 minutes or until soft. Drain.
    2. Whilst the vegetables are boiling melt the butter in a saucepan. When the butter has melted add the milk. Whilst the milk is warming grate the cheese on a plate and then add to the saucepan.
    3. Then fry the bacon in a frying pan until cooked to your liking and make sure you are stirring the cheese sauce at the same time.
    4. Line a Pyrex dish with the pastry and mix the vegetables and bacon together then add to the dish.
    5. Pour over the cheese sauce and place the lid of the pastry on top. Brush with any left over cheese sauce or milk.
    6. Bake in a preheated 180 degrees C for 45 minutes, or until the pastry is golden brown.
