Ali Oli (Garlic Dip)

    A quick and easy garlic dip, not to be confused with the America Ai-oli. There are no eggs in this so it is suitable for vegetarians. This is a Spanish version given to me by a bar owner in Spain.

    Makes: 1 batch

    • 3 garlic cloves (depending on size and to your taste)
    • milk
    • optional a fresh herb of your choice (parsley, coriander, basil)
    • vegatable oil (not olive oil as it is too heavy)
    • salt, to taste
    • lemon juice, to taste

    1. Place garlic and milk (fresh herb if you are using any) in a tall container and about a half cup of milk is average.
    2. Using a hand blender the mix ingredients and slowly add the oil.
    3. It should be noted that when adding the oil it will seem runny , the rule of thumb is about twice as much oil to milk. At that point oil should be added very slowly as when it thickens it turns fast.
    4. Add the lemon juice and salt to adjust the taste.
