Recreate a Greek roast in your slow cooker with this recipe. All of the flavours that I use for the oven-roasted version go into the slow cooker for incomparably tender pork loin and an easy, family friendly dish!
4 tablespoons olive oil
1 large orange, juiced
2 tablespoons Dijon mustard
1 tablespoon dried oregano
2 teaspoons dried rosemary
1 teaspoon dried thyme
salt and pepper, to taste
1kg potatoes, peeled and cut into large chunks
900g pork loin joint

Combine olive oil, orange juice, mustard, dried herbs and seasoning in a bowl (I used a generous teaspoon of salt). Add potatoes and toss to coat, then transfer to the bottom of a slow cooker.
Rub the pork loin with a generous amount of salt and pepper on all sides, then cover in a few spoonfuls of the orange juice mixture. Place fat side up on top of the potatoes in the slow cooker. Pour over the remaining orange juice mixture.
Cook on Low for 6 to 8 hours or High for 3 to 4 hours.
