A fairly simple potato salad. This potato salad uses baby new potatoes and is a great side dish for a variety of menus.
2 tablespoons mayonnaise
2 pickled gherkins, finely diced
1 small red onion, finely diced
1 teaspoon chopped fresh dill
1 pinch white pepper
500g baby new potatoes, cooked, cooled and halved

Mix all of the ingredients together, except the potatoes, in a small bowl.
Place the potatoes in a large bowl and stir the sauce through the potatoes, completely coating the potatoes, but being careful not to break them up.
For the best potato salad, potatoes should be cooked until just tender so that they hold together really well when mixed with other ingredients. Remember that potatoes keep cooking once removed from the heat, unless plunged into cold water to stop the cooking process.
