1/2 lemon, juiced
2 to 4 tablespoons olive oil
sea salt to taste
1 orange, peeled and roughly chopped
50g shelled roasted and salted pistachios

Tear kale into small pieces. Add lemon juice, olive oil and salt. Using both hands gently massage the leaves for a minute or so. Leaves should soften, but do not crush.
