Focaccia - Simple Enriched Dough

    Recipe for focaccia worked by hand. You can add the flavours of your choice to make something rather special. Great with oils and balsamic vinegars, dipped in juices from meatball sauces, broken into salads - anywhere in fact!

    Makes: 1 loaf

    • 210ml room temp water
    • 2 tablespoons olive oil, plus extra for drizzling
    • 350g strong white flour, plus extra for dusting
    • 1/2 teaspoon salt
    • 1 teaspoon sugar
    • 1 teaspoon quick dried yeast
    • fillings of choice - mozzarella, feta, sun-dried tomatoes, sea salt , rosemary , cinnamon, sugars - anything goes!

    1. Pour water and oil into base of mixer bowl then sprinkle flour over water.
    2. Add salt to one side, then add sugar to other side. Add yeast to middle of bowl. Mix by hand /mixer until combined to loose dough.
    3. Tip onto surface (floured) and work until smooth and elastic. Add extra filling choice at this point.
    4. Shape to loose circle, place on oiled plate and cover with oiled plastic wrap. Leave in warm place to prove for half hour.
    5. Move dough onto baking sheet with baking paper. Shape the dough to a rough oval or rectangle. Make indentations at regular intervals.
    6. Cover and leave to rise for a further half hour in a warm place.
    7. Sprinkle with olive oil and topping of choice.
    8. Place in a preheated oven for 20-25 minutes at 200 degrees C until golden.
