Ultimate Fish Pie

    This is a fantastic recipe for showcasing some of the best of what the sea has on offer. This fish pie is hearty, full of flavour and feeds a group of six generously. It tastes fabulous any time of year and is great for feeding a hungry lot.

    Serves: 8 

    • Mashed Potato
    • 900g potatoes, peeled and diced
    • 55g salted butter
    • 450g leeks, sliced
    • salt and pepper, to taste
    • 2 tablespoons chopped fresh parsley
    • 55ml full fat milk
    • Pie Filling
    • 3 tablespoons olive oil
    • 2 onions, diced
    • 2 cloves garlic, minced
    • 1 red chilli, seeded and minced
    • 3 large carrots, peeled and sliced
    • 1/2 lemon, juiced
    • 300ml cream
    • 170g grated Cheddar cheese
    • 6 hard boiled eggs, quartered
    • 3 tablespoons capers
    • 1 bunch fresh parsley, chopped
    • 2 tablespoons chopped fresh coriander
    • 1 good handful rocket leaves
    • 300g cod fillet, diced
    • 300g smoked haddock fillet, diced
    • 300g raw king prawns, shelled and deveined
    • 3 tablespoons plain flour

    1. Mashed Potato: Bring a large saucepan of salted water to the boil and add the potatoes. Cook for 20 minutes until soft. Drain.
    2. Meanwhile, in a casserole dish over a medium heat melt the butter and add the leeks. Cook and stir for 6 minutes until soft.
    3. Pour the leeks and melted butter into the drained potatoes then add the seasoning, parsley and milk. Mash well then set aside in the saucepan and keep warm.
    4. Pie Filling: Preheat the oven to 220 degrees C.
    5. In a frying pan over a medium heat warm the oil then add the onions. Cook and stir for 4 minutes until softened. Add the garlic and chilli then stir for a further 3 minutes. Add the carrots and lemon juice and cook for a further 5 minutes to soften then pour in the cream and bring to a very gentle simmer for 10 minutes. Remove from the heat and stir in the cheese, eggs, capers, fresh herbs and rocket leaves.
    6. Toss the fish and prawns in the flour then arrange the fish evenly in the base of a large casserole dish. Pour over the contents of the frying pan working quickly so that the pie filling does not cool too much. Spoon the mashed potato over and press down with a fork. Season again if desired.
    7. Bake in the preheated oven for 40 minutes until the filling is piping hot in the centre and the potato is golden brown.

    I have made many fish pies over the years but none could compare to this. It was 100% amazingly delicious. I did substitute rocket with spinach but this I am sure is simply optional. I added less capers but regretted this as I should have followed the recipe instructions. Anyway, it is heavenly. I was concerned it might be a little dry but not at all. It ticks every box and some more. My mother who like me loves cooking and enjoys good meals was bowled over by this recipe so thank you for sharing this incredibly tasty recipe.
