Chicken Salad with Cashews and Raisins

    This tried and tested curried chicken salad with cashew nuts and raisins will be a hit at your next summer casual dining event, family picnic or lazy lunch. Chicken seems to be in its element when combined with curried mayonnaise, cashews and raisins; be prepared for guest applause.

    Serves: 6 

    • 450g cooked chicken breast, diced
    • 2 sticks celery, thinly sliced
    • 110g raisins or sultanas
    • 110g roasted and salted whole cashew nuts
    • 225g mayonnaise
    • 1 heaped tablespoon curry powder
    • 1 clove garlic, minced
    • 1 teaspoon lemon juice
    • salt and pepper, to taste
    • sprig of fresh basil, to garnish

    1. In a large mixing bowl, combine the chopped chicken breast, celery, raisins and cashew nuts.
    2. In a separate bowl, mix together the mayonnaise and the curry powder, adding a little curry powder at a time and taste testing as you go along. When desired taste is achieved, add the minced garlic and lemon juice. Mix well.
    3. Add the curried mayonnaise mixture to the chopped chicken mixture and mix well, making sure that the chicken is well coated. Season to taste. Garnish with a sprig of fresh basil.

    This is the most authentic recipe I have found.
