A mixture of plain sponge and chocolate sponge cupcakes decorated for a baby boy shower party. Just change the colour of the icing to pink for a girl or use yellows pinks and blues if you don't know the sex of the baby.


Serves: 12 

  • 225g caster sugar
  • 225g margarine
  • 4 eggs
  • 225g self raising flour
  • 1 teaspoon milk
  • 1 drop vanilla extract or essence
  • 85g cocoa powder (for the chocolate sponge)

  1. Preheat the oven to 175 degrees C. Grease a cupcake tray and line with cupcake cases.
  2. Cream together the sugar and margarine until light and fluffy. Gradually add the eggs and sift in the flour. Beat in the milk and vanilla extract and mix well. At this point, if you are wanting to make chocolate sponge cupcakes also, divide the mixture and add the cocoa powder to the chocolate sponge mixture. Spoon both mixtures into the prepared cupcake cases.
  3. Cook in the preheated oven for 25 minutes until a skewer inserted into the centre of the cupcake comes out clean. Allow to cool then decorate and serve.

To Decorate

Decorate with stars or circles, made with an embossed roller, then add sugar paste cut outs of baby themed items such as bottles, bibs, prams and rocking horses.
