Zucchini and Quinoa Tian

    A tian is a dish originating from Provence which usually includes layered vegetables. This is my own version adapted so it can make a complete meal. I use quinoa but you can use pretty much any other wholegrain. You'll just have to adapt the cooking time.

    Serves: 2 

    • 2 tablespoons olive oil
    • 4 medium zucchini, sliced 5mm thick
    • 150g quinoa
    • 1 garlic clove, diced
    • salt and black pepper, to taste
    • 2 eggs
    • 200ml cream
    • 50g Parmesan cheese, grated
    • 50g Cheddar cheese, grated

    Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min 

    1. Heat oil in a frypan, add the zucchini and cook until slightly tender.
    2. Add the quinoa and garlic then simmer covered for 20 minutes. Season to taste. Quinoa will cook from the juices of the zucchini. Add a bit of water if you think there is not enough liquid.
    3. In a separate bowl mix eggs, cream and grated cheeses.
    4. Once the zucchini-quinoa mix has cooked, put the mix in a gratin dish and pour the egg mixture of top.
    5. Bake in a preheated 200 degrees C oven for 25 minutes, or until set and golden.

    I will make this again. I added turmeric to the egg mixture. Next time I will add some cumin to the egg mixture as well.  -  04 Jun 2016


    Absolutely lovely -did have to add water as my courgettes were not very juicy! Have now done it twice, will try with aubergines next time.  -  23 Sep 2017  (Review from Allrecipes UK & Ireland)
