Roasted Asparagus with Feta

    Go Greek with delicious roasted asparagus with feta cheese. Lunch in under 20 minutes. Just the way I like it!

    Ingredients
    Serves: 2 

    • 2 bunches asparagus
    • 4 tablespoons olive oil
    • 1 lemon, zested
    • 2 teaspoons dried oregano
    • 100g feta cheese

    Directions

    1. Preheat the oven at 200 degrees C.
    2. Remove the tough ends of the asparagus by bending them (the harder end will snap off). Discard the ends and put the asparagus in a roasting tray.
    3. Drizzle the asparagus with the olive oil, lemon zest and oregano. Toss so the asparagus is well coated.
    4. Put in the oven for 10 to 12 minutes, or until asparagus is tender.
    5. Once cooked put on a plate and crumble some feta on top. Serve with crusty bread or pitta bread.
