Mediterranean Roasted Cauliflower

I love roasting cauliflower as it intensifies the flavour and beats boiling every time! I like to experiment with flavours, and this combination of cauliflower with a Mediterranean-inspired mixture of walnuts, raisins, orange zest, oregano and garlic is phenomenal!


Serves: 2 

  • 1 small cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 clove garlic, sliced
  • 1 shallot, sliced
  • salt and black pepper, to taste
  • 3 tablespoons dried seasoned breadcrumbs
  • 2 tablespoons chopped walnuts
  • 50g raisins or sultanas
  • 1 teaspoon dried oregano
  • 2 teaspoons grated orange zest
  • 1 teaspoon olive oil
  • 1 pinch dried chilli flakes
  • 1 tablespoon orange juice
  • 50g feta cheese, crumbled, optional
  • 2 tablespoons chopped fresh parsley

  1. Preheat the oven to 220 degrees C.
  2. Toss together the cauliflower florets, 2 tablespoons olive oil, garlic, shallot, salt and pepper. Roast in the preheated oven for 10 minutes.
  3. Meanwhile, combine the breadcrumbs, walnuts, raisins, oregano, orange zest, 1 teaspoon olive oil and chilli flakes.
  4. Remove the cauliflower from the oven and top with the breadcrumb mixture. Toss to coat. Return to the oven and roast for 10 more minutes, or until the cauliflower is tender and nicely browned.
  5. Immediately sprinkle the cauliflower with the orange juice, feta and parsley. Serve immediately or at room temperature.

Make it Vegan

Easily make this a vegan dish by omitting the feta or replacing with a cheese substitute.
