Oven Baked Cabbage
Cabbage is a very good source of vitamin C in winter. This is an easy and modern recipe for oven baked cabbage with olive oil and balsamic vinegar.

1 red or green cabbage, cut into pieces and torn apart
2 tablespoons olive oil
salt and pepper, to taste
3 tablespoons balsamic vinegar

Preheat the oven to 200 degrees C.
Put cabbage in a baking dish, then drizzle with the olive oil and season well with salt and pepper. Use more pepper if you want more heat.
Cover with foil and bake for 20 minutes.
Remove foil then add 2 tablespoons balsamic vinegar and stir, put back in the oven uncovered for 20 minutes.
Take out and add 1 more tablespoon of balsamic vinegar and stir then serve warm.

A really delicious recipe and made good use of the oven. I actually used half and half red cabbage and white cabbage . I have made it several times already and the last time I added some sliced red onion.
