These sweets have a peppermint taste, but you can use the basic recipe for other flavours as well. Use almond, vanilla or make them with fruity aromas like strawberry - whatever you like best.


Serves: 40 

  • 225g icing sugar
  • 1 egg white
  • 1/2 to 1 teaspoon peppermint essence, or to taste
  • a few drops food colouring, optional

  1. Sift the icing sugar into a large bowl.
  2. In a separate bowl, whisk the egg white with an electric whisk for 30 to 45 seconds until the egg white is light and fluffy.
  3. Add the egg white and the peppermint essence (and food colouring if using) to the icing sugar then mix well. The mixture should be firm, add more icing sugar if necessary.
  4. Roll out the mixture on a surface sprinkled with icing sugar. You may also want to rub some icing sugar on the rolling pin to make sure the mixture doesn’t stick. Roll to a thickness of approximately 1cm, and cut into shapes.
  5. Lay out to dry on a tray lined with baking paper.
