Black Olive and Goats Cheese Muffins

I have recently fallen in love with savoury muffins and this is the latest of my creations. The better the goats cheese, the better the muffins.


Makes: 12 muffins

  • 250g plain flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 50g softened butter
  • 1 egg
  • 120ml milk
  • 50g black olives, finely diced
  • 50g crumbled goats cheese

  1. Preheat the oven to 200 degrees C. Place muffin cases in a muffin tray.
  2. Sieve the flour, baking powder, salt and cayenne into a bowl then add the butter. Rub the butter well in.
  3. Stir in the egg and then the milk to a stiff consistency. Mix in the finely diced olives and the crumbled goats cheese.
  4. Divide into prepared muffin tray then bake in a preheated oven for 25 minutes.
