Cornflake Afghan Biscuits

    Afghan biscuits are a traditional treat from New Zealand. They are made with cornflakes, sugar and cocoa powder making them dense, rich and satisfying.

    Makes: 30 Afghan biscuits

    • 170g butter
    • 85g light brown sugar
    • 170g plain flour
    • 55g cornflakes
    • 25g cocoa powder
    • 1 pinch salt

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C. Grease a baking tray.
    2. Cream together the butter and sugar until light and fluffy. Add the flour, cornflakes, cocoa powder and salt then mix well.
    3. Divide the biscuit mixture evenly into about 30 small balls and place on the prepared baking tray. Use the back of a fork to flatten just a little.
    4. Bake in the oven for 15 minutes until firm. Transfer to a cooling rack.
