Lemon Zucchini Salad

    This lemon zucchini salad is delightfully refreshing, suitable for a vegan diet and does not require any cooking. Perfect all round as a chilled summer salad.

    Serves: 4 

    • 2 teaspoons lemon juice
    • 2 cloves garlic, crushed
    • 1 tablespoon olive oil
    • salt and pepper, to taste
    • 450g zucchini, sliced very thinly
    • 2 to 3 tablespoons chopped fresh parsley or basil

    1. In a small bowl whisk together the lemon juice, garlic, olive oil and seasoning.
    2. Arrange the thinly sliced zucchini in the base of a non-metallic dish and pour the marinade over the top ensuring that the zucchini are well coated on all sides.
    3. Marinate for 4 to 6 hours in the fridge. Just prior to serving, toss in the fresh chopped herbs.


    For more complex flavours, try adding some thinly sliced sweet onion or a variation in fresh herbs.
