Lemon Curd and Blueberry Ice Cream

I had some blueberries from my upside down cake and didn't know what to do with them, and because we had a few days of hot weather I thought I'd make an ice cream.


Serves: 4 

  • 150ml sour cream
  • 30g icing sugar
  • 75g thickened cream
  • 100g lemon curd
  • 100g blueberries

Preparation:10min  ›  Extra time:8hours freezing  ›  Ready in:8hours10min 

  1. Mix the soured cream with the sugar for 1 to 2 minutes.
  2. Add the cream, lemon curd and blueberries then mix everything together.
  3. Line a dish (make sure it's one that can be placed in the freezer) with plastic wrap, leaving the sides longer to so you can cover the mixture. Pour in the ice cream mixture and place in the freezer.
  4. Leave the ice cream in the freezer overnight. When frozen take out of the dish, remove the plastic wrap and its ready to serve.
