Plum and Blueberry Upside Down Cake

1. Start by mixing the flour, baking powder and salt. Set this mixture aside.
2. In a round cake tin (23cm in diameter) bake 50g of butter and soft brown sugar at 180 degrees C until the butter starts to bubble.
3. Mix the 75g butter with the caster sugar until fluffy.
4. Add the egg and vanilla to the butter mixture and mix everything together.
5. Once you have done this add a bit of milk and flour until completely incorporated. Gradually add the milk and flour, alternating between the two and mixing after each addition.
6. Arrange plums over the butter-sugar mixture in the tin then sprinkle the blueberries.
7. Pour the cake mixture on top of the fruit, covering completely.
8. Bake in the oven at 180 degrees C for 40 minutes or until a cocktail stick inserted into the centre of the cake comes out clean. When done take out of the oven and let it cool for 15 minutes.
9. Put a plate on top of the cake and turn it upside down (careful not to burn yourself), remove the tin and cut as you wish ready to serve. ENJOY!
