    A lovely hearty winter warmer. Serve in warmed bowls, topped with fresh herbs and Parmesan if you like. Tuck in.

    Ingredients
    Serves: 4 

    • 1 tablespoon olive oil or rapeseed oil
    • 2 chorizo sausages, sliced
    • 1 red chilli, diced
    • 1 red capsicum, diced
    • 1 garlic clove, crushed
    • 1 (300g) tin cannellini beans, drained and rinsed
    • 1 (400g) tin chopped tomatoes
    • 1 stock cube, diluted in about 240ml water
    • 1 small bunch fresh parsley and basil, finely chopped (optional)
    • 1 tablespoon grated Parmesan cheese (optional)

    1. Heat the oil in a saucepan, add the sausage, chilli, red capsicum and garlic, keep on a medium heat for 5 minutes, stirring occasionally.
    2. Add the beans, tomatoes, stock and bring to the boil, simmer for a further 5 to 10 minutes until reduced a little.
    3. Serve in warmed bowls, top with fresh herbs and Parmesan if you like. Tuck in.
