    I like to make a chunkier version of mushy peas. Use fresh or frozen peas and serve with pan-fried fish fillets or a beefy pie.

    Serves: 2 

    • 1 tablespoon olive oil
    • 2 or 3 spring onions, finely diced (green part only)
    • 300g fresh or frozen garden peas
    • 60g butter
    • salt and pepper, to taste

    1. Heat the oil over medium heat then add the chopped spring onions and cook until they soften, 1 or 2 minutes.
    2. Add the peas and cook for another 2-3 minutes.
    3. Take them off the heat, add the butter and season with salt and pepper.
    4. Mash them roughly with a fork, then serve.
