    This is a simple recipe for a seafood sauce. It can also be used as the basis for a prawn cocktail. If you need to make it in advance, store the sauce in a jar or airtight container in the fridge for up to 3 or 4 days.

    Ingredients
    Makes: 325 g sauce

    • 300g mayonnaise
    • 4 tablespoons tomato sauce
    • 1 teaspoon Worcestershire sauce
    • 1 tablespoon brandy
    • 2 tablespoons lemon juice
    • 1 pinch cayenne pepper or paprika
    • salt and pepper, to taste

    1. Mix the mayonnaise, tomato sauce, Worcestershire sauce, brandy and lemon juice together with a fork until evenly blended.
    2. Season to taste with cayenne pepper, salt and freshly ground black pepper.

    Serving suggestion

    Serve with poached fish, or make prawn cocktail by mixing the sauce with cooked prawns and serve on top of shredded iceberg lettuce.
