A really simple and delicious recipe for shortbread, that uses rice flour as well as normal flour. Try adding chocolate chips, currants or raisins to the dough.


Serves: 8 

  • 85g caster sugar
  • 25g icing sugar
  • 140g butter
  • 170g plain flour
  • 55g rice flour
  • 1 pinch salt

Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

  1. Preheat oven to 140 degrees C.
  2. In a mixing bowl, cream together the sugars and the butter.
  3. Sift in the flours and salt. Work by hand to a stiff dough. Roll out the dough to 1cm thickness.
  4. Either put into a round cake tin or onto a baking tray then prick with a fork.
  5. Bake in the oven until light golden brown, around 30 to 40 minutes.
