Easy Fish Laksa

    Quick, easy and tasty meal in a bowl. This fish laksa is only 334 calories per serve, but 100% flavour!

    Serves: 2 

    • 150g hokkien noodles
    • 1 1/2 tablespoons laksa paste
    • 200ml coconut milk
    • 200ml water
    • 100g mushrooms, sliced
    • 250g firm white fish, cut into bite sized pieces

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Put the noodles in a bowl of boiling hot water for 4 minutes, then drain.
    2. Meanwhile, heat a medium saucepan to hot, add the laksa paste and cook for 1 minute.
    3. Add the coconut milk, water and mushrooms then reduce the heat to medium to low and cook for 2 minutes.
    4. Increase the heat to bring the liquid almost to the boil. Gently place the fish pieces into the liquid. Reduce heat back to medium to low and cook for 4 minutes
    5. Add the noodles and cook for a further 2 minutes.
