Australian Banana Pudding Cake

    Because you can't get instant banana pudding in Australia, I have adapted an American recipe. So open some packets, throw in some bananas and you have the yummiest banana cake ever. this is without doubt the nicest banana cake I have ever made.

    • Cake
    • 1 packet french vanilla cake mix
    • 1 packet vanilla instant pudding mix
    • 2 heaped tablespoons nestles banana quik
    • 4 eggs
    • 1 cup water
    • 1/4 cup canola oil
    • 3 medium sized over ripe bananas, mashed
    • Icing
    • 2 cups icing sugar
    • 1 heaped tablespoon banana quik
    • 1 tablespoon soft butter
    • 4 tablespoons milk

    1. Cake: Preheat the oven to 180 degrees C. Grease and flour a bundt tin or ring tin. Optionally grease and line the bottom of a 20cm cake tin.
    2. Stir the cake mix, pudding mix and quik together. Add in the eggs, water and oil then mix until well combined. Stir in the bananas.
    3. Pour the cake mixture into the prepared cake tin. Place in the preheated oven and cook for 40 to 45 minutes or until a skewer comes out clean.
    4. Cool in the tin the turn onto a plate and ice.
    5. Icing: In a bowl combine all the icing ingredients then combine until smooth. Pour over to cooled cake.
