Take the egg white of one egg and whisk it with the corn flour, add the chicken and ensured it is completely covered.
In a wok add the vegetable oil, when hot add the chicken, when white on all sides add the diced onion. Cook until the onion starts to soften and become translucent.
Add the rice and mixed vegetables then stir to heat through.
Whisk the whole egg and residual egg yolk together. Push the rice and vegetables away from the centre of the wok then add the whisked egg, stir until it starts to scramble then slowly combine into the rice.
When the egg is set add the soy sauce to taste and serve.
