Healthy Breakfast Fry Up

    I was feeling healthy the other morning so my bacon and eggs took an unexpected turn, and worked out so good I am now sharing the recipe with you.

    Serves: 2 

    • 6 rashers of bacon, diced
    • 1 zucchini, diced
    • 1 capsicum, diced
    • 10 mushrooms, sliced
    • 2 eggs

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. In a moderate frying pan, add the bacon and gently cook to render out some of the fat.
    2. Add the zucchini, capsicum and mushrooms to the frying pan then cook until brown and just softened. Serve into two bowls.
    3. Gently fry the two eggs to your preferred doneness. Serve on top of the vegetables.
