In a double boiler (bowl resting in a saucepan with simmering water) melt the chocolate being careful to ensure it doesn't burn, and no water gets into the chocolate.
Line a baking tray with baking paper then gently add round dollops of chocolate. Quickly sprinkle with the 100's and 1000's to create a colourful freckle. Drop or tap tray to flatten the chocolate slightly.
