This is a soft round cake that is unmistakably chocolate. This is a nice change to the really dense chocolate cakes that seem to be popular at the moment.
Makes: 1 layer cake
50g cocoa powder
6 tablespoons boiling water
175g self raising flour
1 teaspoon baking powder
300g caster sugar
- Preheat the oven to 180 degrees C. Grease and line two 20cm round cake tins.
- Combine in a cup the cocoa powder and boiling water, mix well to make a paste.
- In a cake mixer, combine the eggs, milk, flour, baking powder, butter, sugar and cocoa mixture then combine until a smooth mixture is formed.
- Divide the mixture between the two cake tins then bake for 25 to 30 minutes.
