Chocolate Cake

    This is a soft round cake that is unmistakably chocolate. This is a nice change to the really dense chocolate cakes that seem to be popular at the moment.

    Makes: 1 layer cake

    • 50g cocoa powder
    • 6 tablespoons boiling water
    • 3 eggs
    • 175g self raising flour
    • 1 teaspoon baking powder
    • 100g butter
    • 300g caster sugar

    1. Preheat the oven to 180 degrees C. Grease and line two 20cm round cake tins.
    2. Combine in a cup the cocoa powder and boiling water, mix well to make a paste.
    3. In a cake mixer, combine the eggs, milk, flour, baking powder, butter, sugar and cocoa mixture then combine until a smooth mixture is formed.
    4. Divide the mixture between the two cake tins then bake for 25 to 30 minutes.
