Bacon, Potato and Corn Chowder

    I like the idea of chowder, but not a fan of clams or seafood, so substituted with bacon, corn just seemed like the natural partner.

    Serves: 4 

    • 1 large onion, diced
    • 2 cloves garlic, diced
    • 8 rashers smokey bacon, diced
    • 500ml chicken stock
    • 2 large potatoes, cubed
    • 2 sticks celery, roughly chopped
    • 1 (400g) tin creamed corn
    • 60ml thickened cream

    1. In a large saucepan gently cook onion, garlic and bacon for 4 to 5 minutes until soft.
    2. Add the chicken stock then bring to the boil and add the potatoes and celery. Cook until soft. Cool slightly then puree with an emulsion blender or tool of your choice. Return to the saucepan.
    3. Add the creamed corn and season with salt and pepper then simmer for 10 minutes. Add the cream and serve.
