Leftover Ham and Pea Frittata

    This is a great option to use up leftover ham, but of course you can make anytime with ham steak or bacon.

    Serves: 8 

    • 4 potatoes, peeled and cubed
    • 1 tablespoon vegetable oil
    • 1 small onion, sliced
    • 1 cup leftover ham, diced
    • 1 cup peas
    • 8 eggs, whisked
    • salt and pepper, to taste
    • 1/2 cup grated cheddar cheese

    1. In a microwave cook the potatoes until tender but still firm, about 5 minutes on high. Set aside to cool.
    2. In a frying pan gently heat the oil then add the onions sauteing until softened.
    3. Slice the potatoes then add to the frying pan with the ham and peas. Warm and combine to create a uniform layer of ingredients through the frying pan.
    4. In a bowl whisk the eggs with the salt and pepper, then stir through the cheese, pour into the frying pan and gently maneuver the potato mixture to ensure the mixture reaches the bottom.
    5. Cook gently until the bottom is set, place in the oven under a moderate grill to cook the top. Ensure between the two methods the centre is cooked through also.
    6. Turn out onto a plate to serve.
