Orange and Pineapple Trifle

    This is a pudding that should be served at Christmas and it makes a nice alternative from a normal sponge trifle.

    Serves: 8 

    • 1 small pre-bought Christmas pudding
    • 1 tin pineapple pieces
    • 2 oranges, peeled and segmented
    • 1 (500ml) carton custard
    • 1 (300ml) carton of whipping cream sweetened with 1 1/2 tablespoons of icing sugar and whipped till stiff
    • 3 tablespoons of toasted almond slivers

    1. Assemble the trifle in a decorative bowl. First, crumble or dice up the pudding and place in the bottom of the bowl.
    2. Arrange a layer of pineapple followed by the orange segments.
    3. Pour in the custard and place in fridge to set for a few hours.
    4. Before serving, top with whipped cream and decorate with slivered almonds.
