Thai Fish Cakes

    Super easy and very tasty. Bonus-only 66 calories per fish cake! Thai fish cakes make a great entree or light lunch.

    Serves: 2 

    • 300g white fish
    • 1 egg white
    • 2 dried kaffir lime leaves, crushed
    • 1 tablespoon Thai red curry paste
    • 2 tablespoons fresh coriander, chopped

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Combine all ingredients in a blender and blend until just combined.
    2. Form mixture into four fish cakes.
    3. Place fish cakes between two pieces of kitchen roll and press gently to remove any excess moisture.
    4. Set grill to high and cook fish cakes for 5 minutes on each side.
