Boiled Pineapple Fruitcake

    When I was little I always through fruit cake were hard but this boiled pineapple fruitcake is a breeze to make and tastes wonderful.

    Makes: 1 cake

    • 500g dried mixed fruit,
    • 1 cup brown sugar
    • 155g butter
    • 1 (450g) crushed pineapple
    • 2 eggs
    • 1 cup plain flour
    • 1 1/4 cup self raising flour
    • 1 teaspoon mixed spice
    • 1/4 teaspoon bicarb soda

    1. Preheat oven to 160 degrees C. Line a 20cm round cake tin with baking paper.
    2. Place the dried fruit, sugar, butter and crushed pineapple (including juice) in a saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool.
    3. Beat the eggs slightly then stir into the fruit mixture.
    4. Sift together the flours, mixed spice and bicarb soda. Combine with the fruit mixture, when well mixed pour the batter into the prepared cake tin.
    5. Bake for 2 1/2 hours, but test after 2 hours. Remove cake from oven and allow it to cool in the tin for 5 minutes, then turn it out onto a cake rack, remove baking paper and let cool.
