Lemon Drop Cookies

Make these easy lemon cookies, using cake mix and sour cream. Cookies don't get any easier than this.

Serves: 8 

  • 1 packet lemon cake mix (with icing mix)
  • 200ml sour cream
  • 1 egg
  • 2 lemons, finely zested

Preparation:15min  ›  Cook:12min  ›  Ready in:27min 

  1. Preheat the oven to 170 degrees C. Line baking trays with baking paper.
  2. Mix the cake mix, sour cream, egg and lemon zest together until it is a soft mix.
  3. Place icing powder into a small bowl. Drop teaspoonfuls of mix into the icing powder and roll around to coat.
  4. Place 9 balls to a tray to bake, leave a little room between each as they do spread a bit.
  5. Cook for approximately 12 minutes.


If you can't get a cake mix with icing, just a normal lemon cake mix and icing sugar is fine. Or vanilla cake mix if you can't get lemon.
