These are squidgy chocolate brownie-like cookies, combining the best of both worlds! They also happen to be dairy free.


Serves: 72 

  • 85g unsweetened cocoa powder
  • 400g caster sugar
  • 125ml vegetable oil
  • 4 eggs
  • 2 teaspoons vanilla essence
  • 250g plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 60g icing sugar

  1. In a medium bowl mix together cocoa, caster sugar and vegetable oil. Beat in eggs one at a time then stir in the vanilla.
  2. Combine the flour, baking powder and salt then stir into the cocoa mixture. Cover dough and chill for at least 4 hours.
  3. Preheat oven to 180 degrees C. Line baking trays with baking paper. Roll dough into 2cm balls.
  4. Sprinkle the icing sugar into a bowl and roll each ball in it to coat before placing onto prepared trays.
  5. Bake in preheated oven for 10 to 12 minutes. Let stand on the tray for a minute before transferring to wire racks to cool.

I did this recipe, I chilled the recipe mix for the 4 hrs when tried to scoop out mix it was so runny could hardly handle. When put to bake they ended up thin as pancakes.😞 - 08 Jun 2016
