Chocolate Brownie Cookies
These are squidgy chocolate brownie-like cookies, combining the best of both worlds! They also happen to be dairy free.
Ingredients
Serves: 72
- 85g unsweetened cocoa powder
- 400g caster sugar
- 125ml vegetable oil
- 4 eggs
- 2 teaspoons vanilla essence
- 250g plain flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 60g icing sugar

- In a medium bowl mix together cocoa, caster sugar and vegetable oil. Beat in eggs one at a time then stir in the vanilla.
- Combine the flour, baking powder and salt then stir into the cocoa mixture. Cover dough and chill for at least 4 hours.
- Preheat oven to 180 degrees C. Line baking trays with baking paper. Roll dough into 2cm balls.
- Sprinkle the icing sugar into a bowl and roll each ball in it to coat before placing onto prepared trays.
- Bake in preheated oven for 10 to 12 minutes. Let stand on the tray for a minute before transferring to wire racks to cool.

If you look at the video, they are meant to flatten as they cook. Have prepared & refrigerated the mixture but uncooked as yet - 23 Nov 2017
Like the other reviewer, this turned out like flat pancakes! Nothing like the picture. No crinkling at all either. Very disappointed. I even put the mixture in the freezer for the last hour as it didnt seem hard enough - 25 Dec 2016
I've made these twice now. First time they were lovely and stayed nice and round/high, but this time they have spread and are somewhat flat Any idea as so what has caused this? I am positive I did everything exactly the same! - 23 Dec 2016
