    This is a nice and easy recipe using 7-up soft drink and Greek yoghurt. Perfect quick snack to make when you are feeling snacky.

    Ingredients
    Makes: 15 scones

    • 3 cups self raising flour
    • 1 cup greek yoghurt
    • 1 cup 7 up soft drink
    • finely grated rind 2 lemons
    • melted butter to baste (about 1 heaped teaspoon)

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat the oven to 180 degrees C. Grease bottom of a heatproof 9 x 13 dish with butter.
    2. Mix all the ingredients together. The dough will be very soft. Knead lightly on a floured board.
    3. Pat dough out then cut using a round scone cutter. You should get about 15 out of this.
    4. Place in the prepared dish and cook for 12 - 15 minutes until nicely brown on top.
    5. Remove from oven and lightly baste with melted butter. Cool. Serve with lemon butter and cream.

    It was probably my oven (wasn't heating properly, took over 30 mins to cook), but this was not my favourite scone recipe. They were a bit rubbery inside, even though I made sure not to over mix the dough. Saying that, it's a super easy recipe & I used the ingredients I had in the fridge. Would try it again once I get my oven sorted. NB: I didn't include the lemon rind as I was planning on serving with jam & cream. - 03 Sep 2016
