Dense Banana Bread

    This is my favourite banana bread which is dense and cooked in a loaf, not to be confused with my soft banana cake.

    Makes: 1 cake

    • 55g butter, room temperature
    • 2/3 cup brown sugar
    • 1 teaspoon vanilla essence
    • 1 teaspoon mixed spice
    • 1 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 1 1/2 cups mashed banana
    • 3 tablespoons apricot jam
    • 1/4 cup honey
    • 2 large eggs
    • 2 1/4 cups plain flour

    1. Preheat the oven to 180 degrees C. Lightly grease a loaf tin.
    2. In a large bowl combine the butter, sugar, vanilla, mixed spice, bicarb soda, baking soda and salt then beat until smooth.
    3. Add the mashed bananas, jam, honey and eggs then beat again until smooth. Sift in the flour then stir in.
    4. Spoon the batter into the prepared cake tin and smooth the top. Let it rest at room temperature for 10 minutes.
    5. Bake the bread for 45 minutes then gently lay a piece of foil across the top to prevent the top getting too brown. Then bake for an additional 25 minutes.
