Cuban Rice with Black Beans

    Tasty, serve with a salad or use as a side salad dish. Simple ingredients create the wonderful Cuban flavours.

    Serves: 4 

    • 1 onion, diced
    • garlic cloves, crushed, to taset
    • 1 tablespoon cumin
    • red capsicums, in oil
    • 1 cup brown long grain rice
    • 2 1/2 cups vegetable stock
    • 400g black beans, cooked and drained

    1. Cook together the onions, garlic, cumin powder and red capsicum in oil, for one minute.
    2. Mix into the rice, vegetable stock and black beans then cover and simmer for 20 minutes, remove from heat and stand for 10 minutes until rice is tender.
