This cake recipe is loved by adults and children alike, so it won't last long after being put on the table.

Makes: 1 Cake

  • Cake
  • 125g butter, melted
  • 1 cup caster sugar
  • 3 eggs
  • 1/2 cup coconut milk
  • 2 cups coconut
  • 1 cup self raising flour
  • 200g glanced cherries
  • Cherry Ripe Icing
  • 2 large cherry ripe bars
  • 2 tablespoons sour cream

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. Cake: Preheat oven to 180 degrees C. Grease and line a 20cm round cake tin.
  2. Place the melted butter in a large bowl. Add sugar and eggs then mix well. Add coconut milk, coconut, flour and cherries then mix until well combined. Pour into prepared cake tin and bake for 55-60 minutes
  3. Allow to cool slightly before turning out. When cold, ice with cherry ripe icing.
  4. Cherry Ripe Icing: Melt cherry ripe bars over low heat. Remove from heat and add sour cream. Allow to cool to a consistency easy to spread over the cake.


This cake is really nice with coffee.
