Cake: Preheat oven to 180 degrees C. Grease and line a 20cm round cake tin.
Place the melted butter in a large bowl. Add sugar and eggs then mix well. Add coconut milk, coconut, flour and cherries then mix until well combined. Pour into prepared cake tin and bake for 55-60 minutes
Allow to cool slightly before turning out. When cold, ice with cherry ripe icing.
Cherry Ripe Icing: Melt cherry ripe bars over low heat. Remove from heat and add sour cream. Allow to cool to a consistency easy to spread over the cake.
