Sweet Potato and Lentil Curry

    This is a tasty lentil and sweet potato curry. The sweet potato can be swapped for normal potato or pumpkin if desired.

    Serves: 4 

    • 1 onion, finely diced
    • 1 (60g) tin Penang curry paste
    • 1 (400ml) tin coconut milk
    • 3 sweet potatoes, peeled, seeded and chuncked
    • 2 cups prepared lentils
    • coriander, diced to garnish

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat a saucepan and saute the onion with the curry paste.
    2. Add the coconut milk and bring to a simmer, stirring well to combine.
    3. Add the sweet potato and lentils then simmer until cooked though.
    4. Serve sprinkled with diced coriander.
