Cakes always come with ingredients for massive cakes, this is different it creates a small cake ideal for a family of one or two.

Serves: 2 

  • 100g butter, at room temperature
  • 80g caster sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 200g plain flour
  • pinch salt, to taste
  • 6 tablespoons milk

  1. Preheat the oven to 180 degrees C. Grease a small ring cake tin with butter.
  2. In a bowl cream the butter with the sugar until light and fluffy. Add the egg and vanilla then whisk into the butter mixture until smooth and light.
  3. Sift in the flour and salt, then mix thoroughly with the milk to create the cake batter.
  4. Transfer the batter to the ring tin then flatten the surface. Bake in the preheated oven for 20 minutes or until a skewer inserted into the centre comes out clean.
  5. Turn cake out of cake tin and allow to cool.
