Banana Choc Chip Cookies

    What to do with your over ripe bananas? Make cookies of course, and what's better than banana and chocolate.

    Serves: 6 

    • 226g butter, softened
    • 1 cup sugar
    • 1/2 cup brown sugar, packed
    • 1 egg
    • 2 teaspoons vanilla
    • 3/4 cup banana, mashed
    • 3 3/4 cups self raising flour
    • 1/2 teaspoon salt
    • 1 cup chocolate chips
    • extra chocolate chips

    1. Preheat oven to 180 degrees C. Line baking trays with baking paper.
    2. With an electric mixer, cream butter and sugars. Add egg, vanilla and banana. Add the flour and salt in 2 batches, mixing until well combined. Kneed through the chocolate chips.
    3. Roll dough into walnut sized balls. Place 12 to a tray and flatten slightly with a fork dipped lightly in flour.
    4. Cook 12 minutes or until lightly brown then remove from the oven.
    5. While the cookies are still hot, dot the top of each cookie with some of the extra chocolate chips and leave to cool.
