    Serves: 2 

    • 4 bone-in chicken thighs
    • olive oil, as needed
    • 2 cups water
    • 4 leeks
    • 2 large carrots
    • 3 sticks celery
    • salt and pepper, to taste
    • 1 cup rice

    1. In a saucepan, brown the chicken thighs in olive oil then add 2 cups water and let simmer while preparing the vegetables.
    2. Wash and finely slice the leeks, carrots and celery. Remove the thighs from the saucepan when cooked and add the vegetables with a wee tad more water if needed.
    3. Remove the chicken meat from the bones, slice finely and return to the saucepan. Add salt and pepper to taste (you can do this later if your prefer). Add 1 cup rice and simmer for 1 hour. Serve.
